what's for dinner :: nov 1 to nov 14


so i'm doing it - posting my meal plans so you can use 'em if you want and so i have them in an easy spot to access them for rotation. a few things: remember the meal planner i use from futuregirl? its awesome. also i plan meals two weeks at a time and try to have most meals cover two days (cuz you know i abhor cooking). if you try anything let me know what you think! 

saturday, november 1
  • calzones w. salad
    • NOTES: i ususally make calzones using fresh pizza dough purchased from trader joes. split it in half or fourths depending on how big you want your calzones. roll out the dough. brush with olive oil. fill with stuff you like. this may or may not include mozzerella cheese, browned italian sausage, bell peppers, spinach, garlic, onion, italian spices.
sunday, november 2 & monday, november 3
  • breaded chicken w. marinara spaghetti and broccoli
    • NOTES: breaded chicken: thaw boneless skinless breasts. dip in bowl of milk to coat then dip in bowl of seasoned bread crumbs (super cheap when bought from the bulk section) to coat. bake at 350 for 25ish minutes.
      • serve with spaghetti topped with newman's own canned marinara sauce and a side of steamed brocolli.
tuesday, november 4 & wednesday, november 5
  • nachos for election night! (and the next night)
    • NOTES: in a 13x9 baking dish layer the following: 1 can refried black beans, 1 lb ground turkey (or beef) browned and cooked with taco seasoning, shredded cheese, sliced black olives. bake at 350 for 15ish minutes (until cheese is melted and beans are hot.
      • serve with sour cream (which i love to top with LOTS of ground pepper), salsa, and tortilla chips for scooping. i never said everything would be healthy...

    • NOTES: this is really good!
tuesday, november 11 & wednesday november 12
  • tortilla soup
    • ingredients:
      • 1 can of each of the following: kidney beans, pinto beans, black beans, whole kernel corn
      • 1 pkg taco seasoning
      • 1 can mexican spiced stewed tomatoes
      • 2-3 thawed, boneless skinless chicken breasts, chopped
      • put all ingredients in crockpot and cook 8-10 hours on low. top with crumbled tortilla chips, a dollop of sour cream, and ground pepper. use flour tortillas for dipping.

      • NOTES: i've never tried this one so don't blame me if its bad!
